Labyrinth is a one star Michelin restaurant and the brainchild of its famous owner and chef, Han Li Guang. A modern and stylish restaurant located in the Esplanade Mall, Labyrinth’s award-winning menu utilises food science and modern technology to represent familiar Singapore flavours in unexpected forms – a cuisine that Chef Han calls “Neo Sin”. His approach is based on creating dishes that elicit five basic taste sensations: Sweet, Sour, Salty, Bitter and Umami.

The restaurant is a member of The Secret Tables, and its imaginative cuisine is a tribute to local Singaporean flavours and textures, the chef believes in the use of story telling as a significant element and integral to the full appreciation of the dishes.

Chef Han’s team are on a never-ending quest for culinary perfection through innovation, while holding consistency and quality to the highest standard, an approach reflected in their Michelin star status. Their inventive creativity ensures that diners can expect a gastronomical adventure unlike any other, an adventure that challenges their perceptions.

The dishes have unusual blends and a play on local cuisine using out-of-the-box ideas. Our selected samples of Labyrinth’s signature dishes include Japanese Soft Shell Crab – a deep-fried soft shell crab served with a scoop of chilli crab ice cream; Chicken Rice Dumpling – a simple comfort food prepared at it’s finest and Hokkaido scallop, Bak Chor Mee is delightful – a delicious and creatively crafted seared Hokkaido scallop ‘fish cake’ served with dried anchovies, squid and spring onions.
