Kyoto Meets Paris at Sofitel Legend Metropole Hanoi

This month, its beloved “Rendez-vous” dining series at Le Beaulieu welcomes a guest chef from Japan, Chef Takagi Kazuo, the man behind the 2-Michelin-starred Kyoto Cuisine TAKAGI.

For two exclusive nights, Chef Takagi will join Chef Charles Degrendele, Le Beaulieu’s Chef de Cuisine, to present an exclusive multi-course menu that showcases his mastery of “Kyo-ryori,” refined Kyoto cuisine, fused with the hotel’s signature French haute cuisine. The dishes will be elevated with the finest selection of Sturia caviar and exquisite wines, offering a symphony of delicate, nuanced yet powerful flavors.


Kyoto Cuisine TAKAGI has proudly maintained 2 Michelin Stars for 15 consecutive years, and Chef Takagi is celebrated for his expertise in “Kyo-ryori,” renowned for its sophistication and innovation in both flavor and presentation.


The exclusive dinners will be served on Oct. 31 and Nov. 1 from 6pm to 10:30pm at the hotel’s modern French fine-dining restaurant Le Beaulieu. Guests can look forward to a culinary journey that celebrates both precision and creativity. The menu features Sushi bonbon, a delicate combination of tuna, salmon, and dill, while Crabe brings together Vietnamese crab and Hokkaido scallop in a light dashi jelly accented with kikuna.

The harmony between French and Japanese influences continues with Poulet Jaune, showcasing tender French yellow chicken “Albufeira” paired with smoked potatoes, quenelles, and a rich roasted jus. The Boeuf course highlights the deep umami of Wagyu beef tenderloin, served with bamboo shoot, dashi, and a subtle Japanese pepper sauce.


To finish, Îles flottante offers a comforting touch of sweetness, a classic French dessert of vanilla custard topped with baked egg whites and drizzled with salted caramel.

With its 124-year legacy, Le Beaulieu remains one of Hanoi’s most iconic dining destinations, serving modern French cuisine inspired by classical flavors and a strong focus on seasonality and superior ingredients. While the restaurant retains its traditional French charm, each plate is presented with a modern, artistic flair, featuring fresh produce sourced from France, Vietnam, and beyond.


Le Beaulieu’s ‘Rendez-vous’ series spotlights Michelin-star guest chefs working in tandem with Degrendele to create one-of-a-kind gastronomic experiences. Launched in May last year, it has quickly become one of Hanoi’s most anticipated fine-dining events.
