Across nine meticulously composed courses, Executive Chef Wisnu Adiyatma reinterprets Indonesia’s rich culinary traditions through a refined, modern lens. Seasonal harvests, premium local ingredients, and contemporary technique converge in what is quickly becoming one of the most distinctive fine dining experiences in Bali. Expect elegant plating, layered textures, and balanced notes of sweetness, acidity, heat, and umami.
The setting is integral to the storytelling. Double Ikat has long been celebrated as one of Uluwatu’s most compelling restaurants honoring Indonesian heritage, blending warm textures with contemporary design inspired by traditional craftsmanship. Each evening revolves around a mystery hero ingredient selected by the chef. The experience begins with a theatrical Black Box reveal, presenting roots, leaves, spices, and locally sourced elements in their purest form. Complementing the culinary progression is a curated beverage pairing designed to enhance each chapter of the journey.
