W Bali – Seminyak has introduced “Scrap Your Dinner,” a new culinary concept that uses creative and sustainable eating to raise awareness of the amount of food that the world produces every single day and the amount of waste. Director of Cuisine, Richard Bias introduces a series of experimental dinners making use of food items that are usually discarded and transforming them into delicious 5-star quality dishes. Born in the United Kingdom, Richard has received numerous achievements and accolades including Runner-Up for the Gordon Ramsay Scholarship 2001, a finalist in the Academy Culinary Arts Awards of Excellence 2000 and numerous medals at Salon Culinaire’s in Dubai and London. Titled HAENYEO SINGAPORE, the exhibition featured a collection of compelling portraits of the Haenyeo, each telling a story of the hardships faced by these tough women.
