Inspired by the themes of Fire, Smoke, and Modern Techniques, Coastal Heritage, and Sustainability, the refreshed menu takes guests on a culinary journey across the archipelago, blending tradition with contemporary innovation.

At the helm is  Chef Mohamad Raviel Sidik, a Bandung native who draws inspiration from his hometown’s vibrant street food culture and Bali’s rich gastronomic traditions. Influenced by Michelin-trained Amaury Belkhanfar and Indonesian culinary expert Lucky Dailah (of Locavore fame), Chef Raviel showcases his passion for elevating Indonesian flavors to a global level.

The new menu is a journey across the archipelago, offering dishes that captivate both the heart and the palate. A great way to start is with Asinan Bogor, a refreshing dish of mixed fruit, baby romaine, groundnut, berries, and raw mango, tossed in a tangy asinan dressing. The Ikan Signature Laksa is another must-try, featuring noodles, scallop, squid, shrimp, boiled egg, and a choice of Bamboo Lobster or Mutiara Lobster, served in a light yet flavorful broth.

For meat lovers, the Sate Maranggi presents perfectly grilled West Java-style beef skewers served with a zesty tomato sambal.

Seafood enthusiasts will delight in Lawa Bale, a dish of delicate sashimi white snapper slices dressed with green chili and coconut milk, topped with caviar for an indulgent touch.

The Lampung Beef Tartare, made with raw chopped beef, sambal ijo (green sambal), and salted egg yolk, offers a rich umami explosion. Those who crave hearty meat dishes should try Babi Guling, a Balinese spiced porchetta, or Tongseng Lamb, an aromatic lamb chop infused with bold spices. To end the meal on a sweet note, the Klepon Cake is beautifully presented with layers of bold flavors, while the Es Puter ice cream adds a nostalgic touch.
