MIMMO BAKERY BRINGS EUROPEAN PASTRY AND WEEKEND BRUNCH TO SINGAPORE

Following the success of its Hong Kong pop-up, MIMMO Bakery Singapore has opened its first permanent outlet at Asia Square Tower 1, bringing a mix of French and Italian pastry traditions and Hong Kong-inspired flavours to the heart of Singapore’s Central Business District.
Founded by Le Cordon Bleu-trained pastry chef Domenico “Dom” Giammarella, MIMMO reflects Chef Dom’s international culinary experience and his approach to creating quality food that feels both distinctive and approachable. Since its soft launch in May, the bakery-café has been serving handcrafted pastries alongside cakes, fresh pasta, sandwiches and beverages in a bright, contemporary setting.
MIMMO’s East-meets-West character comes through in its signature pastries, including the Egg Tart, Pistachio Bolo Bao and Milk Tiramisu. Its cake selection adds more variety with the Mango Charlotte, Opera and Matcha Raspberry Cake, available both by the slice and as whole cakes. For something savoury, guests can also explore its fresh handmade Build-Your-Own Pasta concept and selection of freshly made sandwiches.
Now, MIMMO is giving diners another reason to visit Asia Square with the launch of its Weekend Brunch, available every Saturday, Sunday and Public Holiday from 10am to 3pm. Curated by Chef Dom, the menu draws on the bakery’s European roots with a selection of sweet and savoury dishes designed for leisurely weekend dining. All brunch mains are accompanied by a choice of hot or cold drink.
MIMMO’s signature croissants also take centre stage in its savoury brunch selection. The Croque Mimmo starts with the bakery’s signature croissant, layered with turkey ham, Gruyère, cheddar and parmesan béchamel before being finished with a sunny-side egg. Another croissant-based creation, the Eggs Royale pairs a warm butter croissant with smoked salmon, herb cream cheese, poached eggs, hollandaise and pickled onion.
For those looking for something more indulgent, the Lobster Poutine brings together butter-poached lobster tail, crispy fries, lobster gravy, cheese curds and chives. It is a heartier addition to a brunch menu that moves comfortably between European café classics and more playful contemporary combinations.
Those with a sweet tooth have plenty to choose from too. The Mimmo Ricotta Toast features grilled sourdough with whipped ricotta, mixed berry compote and honey thyme, while the Peach Ricotta Toast pairs grilled sourdough with whipped ricotta and peach jam. The Buttermilk Pancakes keep things classic, served with cultured butter and maple syrup.
The wider weekend offering also features Chef Dom’s Crème Brûlée Croissant French Toast and Banana Foster Pancakes, alongside the customisable Build-Your-Own Brunch concept. Diners looking for something more savoury can also head to the Build-Your-Own Pasta Bar.
